Do you love the taste of a juicy burger for dinner but feel like maintaining a healthier diet? In that case, make a switch to salmon. Here is a salmon burger that will prove to be a nutritious yet delicious meal, filled with those vital Omega-3s.
Ingredients:
- Salt
- Pepper
- 1 pound salmon fillet
- 1 tablespoon olive oil
- 1 large egg
- 1 teaspoon lemon zest
- 1/2 cup Greek yogurt
- 2 scallions
- 2 cups broccoli
- 2 Persian cucumbers
- 3 tablespoons chopped dill
- 3 tablespoons chopped parsley
- 4 brioche buns
- 8 lettuce leaves
Instructions
- Beat an egg in a medium bowl and add salmon, scallions, and 2 tablespoons each of dill and parsley. Season with salt and pepper according to taste.
- Place a large skillet on medium heat and add oil. Put the salmon into the skillet and form burger patties. Cook for 2 minutes per side until golden brown.
- Combine yoghurt, lemon zest and the remaining dill and parsley in a bowl. Add 1/4 teaspoon each of salt and pepper.
- Once the patties are ready, spread the yoghurt sauce evenly across the bottom buns. Top with salmon patties, lettuce, cucumber, and sprouts before adding the top bun.
