If you like piña coladas and getting caught in the rain, you have very popular taste. It seems as though the pineapple and coconut cocktail was the most popular drink of the summer, based on findings by analyst company CGA. Data from the company showed the cocktail rocket from 17th to 9th spot on its list of Top 30 cocktails, thanks to an 87% increase in orders over the season.
If you’re planning to be pool-side, make sure you have a piña colada in hand. Rainstorm optional.
Ingredients:
- ½ cup pineapple, diced
- 2 ounces pineapple juice
- 2 ounces coconut cream
- 1 ½ ounces white rum
- 1 ounce dark rum
- 1 ½ cups ice
- Pineapple slices
Instructions:
- Place the diced pineapple in the freezer, and allow it to freeze for 3 hours.
- Once frozen, add the pineapple to a blender with the juice, coconut cream, white rum, dark rum, and ice. Blend until smooth and frosty.
- Pour the drink into 2 glasses and garnish the rim with pineapple slices.
