We admit it: sometimes we don’t go grocery shopping as often as we should. There is a high chance that if you check our refrigerator in the middle of the month you will probably find a block of cheese, a tub of Greek yogurt, some eggs, and maybe a half-opened bottle of wine. Not the best selection if someone is coming over last minute…
While the eggs and cheese can be turned into an omelet, here is a way to transform your yogurt into a super easy dessert.
Ingredients:
- 1 cup Greek yogurt (whole or 2%)
- 1 cup heavy cream
- ¼ cup honey
- ½ teaspoon vanilla extract
- Pinch of salt
Instructions:
- Place all the ingredients in the bowl of a stand mixer.
- Mix at low speed to start, then increase to high and whip for around 5 minutes until the mixture is thick and stiff.
- You can choose to refrigerate the parfait so it will thicken up even more, or serve it as is with fruit and your other favorite toppings.
