Early mornings are not the time of day when one has the most thinking capacity, so breakfast ideas are few and far between. If you’re the type who likes to hit snooze on the alarm and then finds yourself rushing out the door, you’ll love this homemade granola that is made for those who are always on the go.

Ingredients

  • 3 cups mixed raw nuts (pistachios, pecans, walnuts, almonds)
  • 1 cup unsweetened coconut flakes
  • ¼ cup pure maple syrup
  • ¼ cup tahini
  • 2 tablespoons extra-virgin olive oil
  • 1¼ teaspoon kosher salt
  • ½ teaspoon ground cardamom or cinnamon

Instructions

  1. Pre-heat the oven to 300°F and line a rimmed baking sheet with parchment paper or foil. 
  2. Toss the nuts and coconut in a large bowl and set to one side. Whisk the maple syrup, tahini, oil, salt, and cardamom in a medium bowl and then pour the mixture over the nuts mixture, coating them evenly.
  3. Scrape the coated nuts onto the prepared sheet and bake, tossing and rotating sheet from front to back every 10–15 minutes, for 30–35 minutes, until golden brown.
  4. Let the granola cook on the baking sheet for around 20 minutes before breaking it into pieces. 
  5. Store the granola in an airtight container at room temperature.

We love a good energy bar. The nutritional snack is perfect for those times when you’re on the go and hunger hits, or when that afternoon slump takes hold around 4 p.m. 

Many energy bars rely on sugar that will give you a quick boost but will dissipate just as fast, or they contain nuts and other potential allergens. Luckily, these bars are super easy to make yourself, and can be made vegan and sugar-free.

Ingredients

  • ½ cup sesame seeds
  • ½ cup hemp seeds
  • ½ cup sunflower seeds
  • ½ cup shredded coconut
  • 2 cups pitted dates
  • ½ cup tahini / peanut butter / almond butter
  • ½ teaspoon sea salt

Instructions

  1. Add the seeds and coconut to a food processor and blend to a flaky consistency. 
  2. Add in the dates, tahini or nut butter, and sea salt, and process until you have a thick, sticky dough you can easily press together between your fingers. If it seems too crumbly, add 1-2 tablespoons of warm water and process again.
  3. Line an 8-inch square baking pan with parchment paper. Press the dough firmly into the pan until it is flat and solid.
  4. Place the pan in the fridge for 30-60 minutes to firm up and then cut into bars.

With all the time spent cooking for Thanksgiving, you’re probably going to be left eating turkey for the next fortnight. That’s not necessarily a bad thing. Especially when this sandwich, which makes use of all those leftovers, is as delicious as it is.

Ingredients

  • 8 slices bread of your choice, toasted if desired
  • 1 cup turkey breast, sliced
  • 1 cup dark-meat turkey, shredded
  • 2 cups assorted Thanksgiving leftovers (green beans, sweet potatoes, mashed potatoes or other sides), warmed
  • 4 leaves lettuce 
  • 4 cups stuffing
  • ½ cup mayonnaise
  • ½ cup cranberry sauce
  • ½ cup leftover gravy
  • 2 tablespoons unsalted butter
  • 4 teaspoons olive oil
  • Kosher salt
  • Freshly ground black pepper

Instructions

  1. In a small bowl, whisk together the mayonnaise and cranberry sauce. Set aside.
  2. Place the shredded dark-meat turkey and gravy in a saucepan and gently heat over medium-low, stirring occasionally, until warmed through. 
  3. Cook the stuffing in a non-stick skillet until browned and crisp.
  4. In the same skillet, melt the butter over medium-low heat until foamy. Add the sliced turkey breast, flipping occasionally until warmed through, and season with salt and pepper.
  5. Spread 2 tablespoons of the cranberry mayonnaise onto a slice of bread and layer your toppings. Spread more cranberry mayonnaise on the other slice of bread before closing the sandwich and cutting in half.

Apples are awesome all year round, but they’re particularly lovely in the fall. Everyone may be focusing on pumpkin, but true autumn aficionados know that apples are where it’s at. If you’re part of Team Apple this season, you need to make this apple butter.

Ingredients:

  • 5 pounds apples
  • 2 tablespoons vanilla
  • 1 cup brown sugar
  • 1 teaspoon ground cloves
  • 4 teaspoons cinnamon

Method:

  1. Peel and core the apples, then slice them into quarters.  Cut them smaller if they are really big.
  2. Place the apple slices in a slow cooker and cook for 6-8 hours, stirring every couple of hours. 
  3. Once cooked, blend the softened apples with the sugar, vanilla, and spices. 
  4. Spoon into jars and store in the refrigerator for up to 1 week; or freeze for up to a year.

One of our favorite parts of fall is all of the fun foods that the season brings, and while we enjoy pumpkin spice as much as the next person, apple cinnamon has always held a special place in our hearts. Apple picking is one of our favorite autumn activities, but it also tends to leave us with more apples than we know what to do with. We typically end up searching for recipes to use the fruits of our labor before they go bad, so this year we’ve decided to get creative and round up some drink recipes to utilize our apples in new and unique ways.

Apple Pie Smoothie

This vegan recipe by Eating by Elaine is surprisingly filling and seriously delicious. It includes almonds, chia seeds, and cauliflower for fiber and protein, and each serving contains a whole apple and plenty of cinnamon.

Apple Pie Bourbon Sour

The perfect cocktail to serve at a fall get-together or even as a seasonal signature drink at a wedding, this bourbon-based drink by Pinch Purrfect is bursting with apple flavor from homemade apple pie simple syrup and fresh apple slices used for garnish on top.

Apple Cinnamon Latte

If you like piña coladas and getting caught in the rain, you have very popular taste. It seems as though the pineapple and coconut cocktail was the most popular drink of the summer, based on findings by analyst company CGA. Data from the company showed the cocktail rocket from 17th to 9th spot on its list of Top 30 cocktails, thanks to an 87% increase in orders over the season. 

If you’re planning to be pool-side, make sure you have a piña colada in hand. Rainstorm optional.

Ingredients:

  • ½ cup pineapple, diced
  • 2 ounces pineapple juice
  • 2 ounces coconut cream
  • 1 ½ ounces white rum
  • 1 ounce dark rum
  • 1 ½ cups ice
  • Pineapple slices

Instructions:

  1. Place the diced pineapple in the freezer, and allow it to freeze for 3 hours. 
  2. Once frozen, add the pineapple to a blender with the juice, coconut cream, white rum, dark rum, and ice. Blend until smooth and frosty. 
  3. Pour the drink into 2 glasses and garnish the rim with pineapple slices.

Eva Longoria has come up with the hottest drink of the season! The Texas native took to social media to share her version of what is known as “ranch water”. The viral drink features sparkling mineral water, tequila, and lime, but the Desperate Housewives star has put her own spin on it—using her own tequila, of course—and we think it’s even better. 

Ingredients:

  • 1 bottle Topo Chico
  • 1 ounce Casa Del Sol Blanco Tequila
  • Splash of grenadine
  • Lime wedge
  • Splash of grapefruit juice

Instructions:

  1. Drink some of the Topo Chico so there is space in the bottle to add the other ingredients. 
  2. Pour in the tequila, grenadine, and grapefruit juice.
  3. Stuff in a lime wedge and mix. 
  4. Enjoy!

When it’s too hot to even dream about turning on the stove, you know it’s salad season. If there is one salad that has swept the internet this summer, it has to be the Green Goddess. Although the base of the salad may be simple, the dressing is where it all comes together. Take a bite—you’ll feel like a goddess in no time!

Ingredients:

  • 1 small head green cabbage/iceberg lettuce
  • 1 large cucumber
  • ¼ cup chives
  • 1 bunch spring onions
  • 1 cup basil leaves
  • 1 cup fresh spinach
  • 2 cloves garlic
  • 1 small shallot
  • 2 lemons, juiced
  • ¼ cup olive oil
  • ¼ cup cashews
  • 1/3 cup nutritional yeast
  • 1 teaspoon salt
  • 2 tablespoons rice vinegar 

Instructions:

  1. Wash and chop all of the salad ingredients with a sharp knife as small as you would like. Place in a large bowl.
  2. Add all of the liquid salad dressing ingredients to a blender (olive oil, lemon juice, rice vinegar). Add the rest of the dressing ingredients to the same blender.
  3. Blend until your dressing is a thick, pourable consistency. 
  4. Pour the dressing over the salad ingredients, mix well, serve with pita chips and enjoy!

  1. Place the diced pineapple in the freezer, and allow it to freeze for 3 hours. 
  2. Once frozen, add the pineapple to a blender with the juice, coconut cream, white rum, dark rum, and ice. Blend until smooth and frosty. 
  3. Pour the drink into 2 glasses and garnish the rim with pineapple slices.

Eva Longoria has come up with the hottest drink of the season! The Texas native took to social media to share her version of what is known as “ranch water”. The viral drink features sparkling mineral water, tequila, and lime, but the Desperate Housewives star has put her own spin on it—using her own tequila, of course—and we think it’s even better. 

Ingredients:

  • 1 bottle Topo Chico
  • 1 ounce Casa Del Sol Blanco Tequila
  • Splash of grenadine
  • Lime wedge
  • Splash of grapefruit juice

Instructions:

  1. Drink some of the Topo Chico so there is space in the bottle to add the other ingredients. 
  2. Pour in the tequila, grenadine, and grapefruit juice.
  3. Stuff in a lime wedge and mix. 
  4. Enjoy!

When it’s too hot to even dream about turning on the stove, you know it’s salad season. If there is one salad that has swept the internet this summer, it has to be the Green Goddess. Although the base of the salad may be simple, the dressing is where it all comes together. Take a bite—you’ll feel like a goddess in no time!

Ingredients:

  • 1 small head green cabbage/iceberg lettuce
  • 1 large cucumber
  • ¼ cup chives
  • 1 bunch spring onions
  • 1 cup basil leaves
  • 1 cup fresh spinach
  • 2 cloves garlic
  • 1 small shallot
  • 2 lemons, juiced
  • ¼ cup olive oil
  • ¼ cup cashews
  • 1/3 cup nutritional yeast
  • 1 teaspoon salt
  • 2 tablespoons rice vinegar 

Instructions:

  1. Wash and chop all of the salad ingredients with a sharp knife as small as you would like. Place in a large bowl.
  2. Add all of the liquid salad dressing ingredients to a blender (olive oil, lemon juice, rice vinegar). Add the rest of the dressing ingredients to the same blender.
  3. Blend until your dressing is a thick, pourable consistency. 
  4. Pour the dressing over the salad ingredients, mix well, serve with pita chips and enjoy!
