]]>Start with cooked quinoa or bulgur wheat as the base. Top it with cucumbers, sun-dried tomatoes, marinated olives, feta or goat’s milk cheese, chickpeas, artichoke hearts, and fresh herbs like parsley and mint. Don’t forget a drizzle of olive oil and lemon juice.
We’re using brown rice, rather than white, as our base. Stir-fry some vegetables like bok choy, mushrooms, carrots, and snap peas. Add in some tofu or shrimp for protein, and top it off with a sesame and ginger dressing.
Not all grain bowls need to be savory. Hop on the oat train by adding sliced bananas, berries, chopped nuts almonds or walnuts, chia seeds, a drizzle of honey or maple syrup. A sprinkle of cinnamon will elevate the dish, and you can even include some peanut butter if you like.
